Varieties and Characteristics

The primary varieties of black pepper from Kerala include Malabar Garbled Grade 1 (MG1) and Tellicherry Garbled Extra Bold (TGEB), Tellicherry Garbled Special Extra Bold (TGSEB). Tellicherry peppercorns are distinguished by their size and maturity, as they are allowed to ripen longer on the vine, resulting in larger berries with a more complex flavor profile. Tellicherry peppercorns are graded based on size, with Tellicherry Special Extra Bold peppercorns being 4.75 mm or larger. The flavor of Kerala black pepper is known for its intensity, complexity, and a balance of pungency, warmth, and citrusy notes.
